Founder’s Philosophy

Wine built around intention.

Toro Negro was not born from a single vineyard or a single place. It was born from a career spent moving between cultures, restaurants and traditions.

Our chefs have worked in French restaurants and leading hospitality venues across Australia, Argentina, the United States, Italy, the Snowy Mountains and Spain. Working at that level, across so many cultures, changes how you think. You stop asking only where an ingredient comes from and begin asking what it contributes. Balance, structure, texture and harmony become more important than borders.

While developing the menu, we studied whisky making and became fascinated by how great whisky houses build luxury through selection, blending and composition—not through ownership of land alone. Champagne houses work in much the same way, yet still wine has largely resisted that philosophy.

Toro Negro works like a wine house—we grow some fruit locally, source exceptional parcels globally, and compose all our wines here with food in mind.
